
We love it when certain fruits and veggies go on super sales. Last week, at our local discount grocery store, they had bundles of leeks for 79 cents a bundle. (Each bundle has 2 to 3 leeks.)
Leeks are so very tasty and able to be used is such diverse recipies. But these leeks had already had a few sheathes removed, and were needing to be used quickly.
We purchased all of the leeks they had, about nine bundles. I chopped some for freezing, and some for immediate use in a soup. The rest, I chopped and decided to try drying. I had never done so before, but thought it should work, and figured I would document my try.
I chopped the leeks to between a 1/4 and a 1/2 an inch thickness. I contemplated separating the rings, but decided against it. I arranged them on my dehydrator racks, with some space between each, and set it to 140 degrees for 14 hours (the afternoon and over night).

I pulled them out the next morning and they were perfectly crispy.

I crushed them by hand.


It worked quite well. I imagine you could crush or chop them up with a food processor as well, but it was easy enough this way.

I filled my spice jar, and even had enough left over to fill a storage bag.

I am very happy with my experiment. And will definitely do it again.
One of my girls even snagged a few just to eat, and said they were tasty onion chips.
